Due to my absolute business being married, a to-be mum, just absolutely crazy work, my Seasonal Things was dropped.
Well, it's back! And as you can see, it's coming up to winter. That's getting me all excited, and my excitement needs to be contained in this topic again.

I've been massively busy with other things - I've been on FWG, but not had the time to be able to post on here each day. You know, marrying elves is a very hard thing to do.

Here's the first one - unfortunately for bob, elf free -
~~~~ Toffee Apple Muffins ~~~~~
I've recently collected all the apples off my tree, and I always always make at least a few batches of these....they go quicker than you can say "this is actually september, not halloween"
2 mediumish eggs, lightly beaten
80g caster sugar - make sure it is caster sugar, or they'll die D:
240ml milk - full fat!
100g butter, melted - NOTE - the safest way to melt butter is like chocolate - over a pan of hot water in a glass bowl. you can microwave it, but be careful and make sure you put it in for 10 seconds, stir, and repeat until it is all melted with no lumps.
300g plain flour
2 teaspoons baking powder
1 and a half teaspoons of salt
A pinch of cinnamon - if you don't like cinnamon, you can equally substitute about half a teaspoon of vanilla extract.
2 apples, peeled, cored, finely chopped - please, please be careful, no loss of fingers please.
200g of toffee - In england, this is the chewy toffee which is almost like fudge, not the hard version...I'm not sure how it is in america, but it's the soft one.
1. Turn your oven to 190C/380F/Gas 5 (I think, I only work in celsius, sorry) and line a 12-hole muffin tin with paper cases. NOTE - it's worth trying to get your hands on decent paper cases, it's the difference between having really nice looking muffins and your whole batch catching on fire.
2. Mix the eggs, sugar, milk and melted butter in a decent sized bowl. Make sure that you mix them until it's very smooth - unmixed eggs are quite yucky
Sift in your flour, baking powder, salt and cinnamon (or vanilla) into the bowl. Fold it all in (FOLDING - it's a way of mixing to create lots of air within the mix. Hard to explain, I'd google it if you don't know)
3. Add the apples and give it a little mix.
4. Fill each of your cases with a small amount - you should aim to put about half of the mixture in. Then, take a few bits of toffee, and place them on top of the spoon of mixture you put in the cases - make sure your toffee is finely chopped so it's not too hard to cook. Then, put another spoon of mixture over the top so all of your mixture is in the bowl.
5. Bake for 30-35 minutes until you can stick a skewer into one and no mixture is left on it when you bring it out. Cool them on a wire rack.
Voila!
