EASTER RABBITS CUPCAKES
These are the most adorable, cute cupcakes you could ever see. And easy to do!
For the Cupcakes:
115g Butter
115g Caster Sugar
1 Tsp Vanilla Extract
2 Eggs, beaten
125g Self-Raising Flour
1/2tsp Baking Powder
For the Frosting:
175g Butter
4tsp Double Cream
350g icing sugar
Green Food Colouring
1. Pop your oven on to 180C. Beat the butter and sugar together until it's light and fluffy.
2. Put a tiny bit of the eggs in at a time to the mixture, and beat it really well. If it starts to curdle, take a teaspoon of the flour and mix it in. Beat until all the eggs are in, then pop in the vanilla. Sift the flour in slowly and mix.
3. Put this mixture in 12 cupcake cases, and cook them in the oven for about half an hour, or just less. You can tell when they're done if you put a cocktail stick into the middle of the cake, and when you take it out there is no mixture on it.
4. Make your frosting by beating all the ingredients together until they are combined - this should take about 10-20 minutes depending on how hard you mix it. If you have a piping bag, find the smallest nozzle. If you don't, take a plastic sandwich bag and cut a TINY snip in the bottom corner. Fill either your piping bag or plastic one with the frosting.
5. Starting at the middle, pipe tiny little spikes up until you've covered the whole cake. (this should look like grass!)
6. If you don't have any rabbit shaped sweeties to pop on the grass, use some mini chocolate easter eggs, or make some flowers out of marzipan.
Voila!
