there is no bitter element in mayonaise...
(actually the american version of mayo is pretty sweet)

So with proper belgian fries, obviously proper mayonaise too.

That's what i'm saying! I never attempted it with real mayo.. seems like it would be disgusting. But I make a mean potato salad ;)
