Because an anime would be boring if all the female characters had one or two hair colors. Plus different hair color can signify what kind of character they are, like red represents the tomboy/feisty archetype anime girl. :/

i am aware, that the different color of hair, in aneme, is kinda like a fashion, for the Japanese. If you look at most Anime Girls, you will see that their clothes are the same color, or shade of color as their hair. It's a Japanese way of fashion. May i remind you that the Japanese are very different from the outisde world. Japan is, you could say, an origin of life. An old one i might add too. They are completely different. Same as other countries too.
